The story
In commercial coffee production of the past, coffee seeds that turned red during processing were considered defective. In 2015, Ninety Plus discovered that these accidental seeds had a very special taste with incredible red wine and red fruit intensity. The resulting coffee was named Ruby after the uniform and deep burgundy color of the unroasted coffee seeds.
Championship highlight
Competitors from Japan and Canada used Ruby to place second and third, respectively, in the 2016 World Barista Championship in Dublin.
